Powerfully structured as a young wine, with a hint of vanilla bean (20 percent of the base wines were vinified in oak), this is more accessible a day after the cork is popped: The mineral acidity turns frisky, the layered intensity of cèpes and chalk mellows toward generosity.

David Pehu’s NV Brut Face Nord is surprisingly open for a Champagne made from vineyards in Verzenay and Verzy, where the wines tend to be more steely and taut. Spice, dried flowers and red Pinot fruit build in a soft, caressing Champagne that can be enjoyed with minimal cellaring. Time in the glass brings out attractive freshness, lift and energy. This is a terrific introduction to David Pehu’s range. Even with the blocked malolactic fermentation, this is a pretty supple and inviting Champagne. The interplay of fruit richness and vibrancy is compelling. Disgorged: March 2018.

Medium to full-bodied, fleshy and incisive, with racy acids and chalky grip, it will unwind further with a little time on cork.
