A very creditable contribution to what has become an unfashionable genre is Piper-Heidsieck’s NV Demi-Sec Cuvée Sublime, a lovely wine that wafts from the glass with aromas of honeyed peaches, fresh pastry, nectarine and caramelized citrus. On the palate, it’s medium to full-bodied, with good depth at the core, racy acids and a fine mousse, concluding with a precise finish that avoids any suggestion of cloying sweetness despite its off-dry style. A dessert wine with sweet vanilla flavors, wrapped around nutty, oily flavors. Fruit is not the object here; it’s more decadent, with unctuous, sweet and lingering vanilla and Bourbon-barrel accents.

Based on the challenging 2017 vintage, the current release of Moët & Chandon’s NV Brut Imperial was disgorged with seven grams dosage (representing a reduction of around 50% in the last 20 years) and contains an unusually high proportion of reserve wines. Offering up aromas of pear, peach and citrus oil mingled with hints of fresh bread and white flowers, it’s medium to full-bodied, ample and pillowy, with racy acids and an enveloping core of fruit, complemented by a pinpoint mousse and concluding with a nicely defined finish. The latest iteration of Laurent-Perrier’s NV Brut Cuvée Rosé is showing brilliantly, bursting from the glass with notes of smoky red berry fruit, apples, blood orange, pomegranate and warm biscuits. On the palate, the wine is medium to full-bodied, broad and vinous, with a delicate mousse, good depth at the core and ripe acids, concluding with a sapid, gently phenolic finish. This is a sophisticated, gastronomic rosé that would work well at table.
Starts off toasty and citrusy, then seems to add weight and size in the glass, adding layers of cherry-berry fruit and a hint of dark chocolate. It ends up being a big, broad shouldered wine you could pair with main-course meats.

This must be one of the most familiar nonvintage Champagnes, so it’s good to be able to report that it is much improved. The dosage has been lowered, and there is considerable freshness, crispness with apple and toast. It is full-bodied but well balanced.
This most familiar of nonvintage Champagnes has been improving each year. While it retains enough dosage to be easily drinkable, its acidity and crisp texture allied to the citrus element make for a sophisticated, attractive wine. Drink this bottling now.
