Piper Heidsieck Cuvee Sublime Demi-Sec Champagne NV / 750 ml.

Item#: 29605

RP91+91+ pts. - Robert Parker’s The Wine Advocate - 30th Aug 2019
A very creditable contribution to what has become an unfashionable genre is Piper-Heidsieck’s NV Demi-Sec Cuvée Sublime, a lovely wine that wafts from the glass with aromas of honeyed peaches, fresh pastry, nectarine and caramelized citrus. On the palate, it’s medium to full-bodied, with good depth at the core, racy acids and a fine mousse, concluding with a precise finish that avoids any suggestion of cloying sweetness despite its off-dry style. Expect it to sing with additional bottle age. (William Kelley)
WE9191 pts. - Wine Enthusiast - 12/31/2003
A dessert wine with sweet vanilla flavors, wrapped around nutty, oily flavors. Fruit is not the object here; it’s more decadent, with unctuous, sweet and lingering vanilla and Bourbon-barrel accents.
SP8989 pts. - Wine Spectator - Dec 15, 2014
Toasted marshmallow and coconut accents impart rich and smoky character to this finely balanced demi-sec, with flavors of pear tart and lemon parfait. Fine and creamy in texture, showing mouthwatering, citrusy acidity throughout. Drink now through 2019.

Bring on the bubbly! Perhaps no other wine region in the world has the name recognition of Champagne, to the point where people often mistakenly use the word "Champagne" to describe any sparkling wine. Yet only wines produced within the region can legally be called "Champagne," and to this day it produces some of the finest sparkling wines known to earth.

Country / France

View more wines from France

The French did not invent winemaking. They simply perfected it. For centuries, France has been producing wines that inspire poetry, awe, and wonder; wines that blur the lines between nature, craftsmanship, cuisine and art. These are the wines that inspired cultures around the globe to follow in France’s footsteps, planting Cabernet Sauvignon, Pinot Noir, Chardonnay, Sauvignon Blanc, Syrah, Grenache, Merlot, Semillon and more.

Yet as often as they are emulated, the magic of their terroirs can never be duplicated. You may taste Cabernet from around the world, but perhaps none as elegant and regal as Bordeaux. You may try Pinot Noir or Chardonnay from various climates, but none with the earth-bound soul and ethereal reach of Burgundy.

A bold and generous champagne for Brut Nature, the bone-dry finish mellowed by the ripe-apricot character, plus hints of toast and melted butter. Not super-elegant, perhaps, but gives a lot of pleasure and has entirely its own style. 100% pinot noir. Drink now. (James Suckling)
RP92+92+ pts. - Robert Parker’s The Wine Advocate - 22nd Apr 2021
Clouet’s NV Silver Brut Nature Grand Cru is a pure Bouzy Pinot Noir that was disgorged without any dosage. This disgorgement displays a medium intense golden color and a complex and refined bouquet of ripe and pureed apples and discreet chalky as well as brioche aromas. The palate is elegant, straight and fresh, very pure and salty on the finish. This is a challenging Brut Nature that needs to be aged for two or three years to gain complexity and finesse and to smooth its current edges. The finish is mineral, limestone and salty but also a bit drying at this moment. (Stephan Reinhardt)

JD93+93+ pts. - Jeb Dunnuck - 11/17/2023
The first launch for this wine, the NV Champagne Essentiel Blanc De Noirs Extra Brut is 80% Pinot Noir with the rest Meunier and comes from sustainable grapes. It doesn’t include any reserve wine, so it’s entirely from the 2019 vintage, and moving forward, Boutillat will begin to introduce a new solera to go into this cuvée, coming from 10 different villages across the region. A bright straw hue, the wine opens to a delicate smoky lift with fresh notes of orange citrus, blackberry, and flowers. The palate is pure and fantastic, with distilled black fruit, a fresh, chalky texture, and an elegant, fluffy mouse as well as a well-rounded purity of fruit through the mid-palate. A great first vintage for this wine, it has a lot of charm now and will age gracefully over the coming 10–12 years. It’s a wonderful gateway into Blanc de Noir, a category that should be more prized. (Audrey Frick)

The quality of this nonvintage wine from Piper-Hedsieck is a sign of the increasing quality of the range as a whole. It’s a wine that hovers comfortably between freshness and maturity, between a soft dosage and crisp fresh apples. This bottling is ready to drink.
ST8888 pts. - Stephen Tanzer’s International Wine Cellar - Nov/Dec 2005
Medium straw. Light gold, with a strong mousse. Smoky, rich and floral on the nose, with suggestions of orange peel, pear and jasmine. Nicely concentrated and moderately weighty, with flavors of lemon cream and buttered toast. Quite long, with the butter and lemon notes resonating.
RP8888 pts. - Robert Parker’s The Wine Advocate - 31st Dec 2008
Ripe pears, crisp green apples and flowers emerge from Piper-Heidsieck’s NV Brut Cuvée. This medium-bodied non-vintage Champagne offers excellent persistence and a long, clean finish. It is a very solid effort at this level. The Brut Cuvée is 55% Pinot Noir, 30% Pinot Meunier and 15% Chardonnay. This is lot L070921 12253, disgorged December, 2007. Anticipated maturity: 2008–2010.

A harmonious Champagne, with well-knit, mouthwatering acidity, offering hints of bread dough and spun honey that enrich flavors of black cherry, salted almond and preserved lemon. Not a powerhouse, but this shows good focus while remaining fine and creamy in texture. The minerally finish shows hints of smoke and oyster shell. Pinot Noir, Pinot Meunier and Chardonnay. Drink now. (Alison Napjus)
SP9292 pts. - Wine Spectator - Nov 30, 2022

This is showing aromas of apricots, grapefruit, pears and short crust. Some walnuts, too. Medium-bodied, with soft bubbles and tasty nut and pie crust notes at the end. Blend of pinot noir, meunier and chardonnay. 24 months on the lees. Tasted from a magnum bottle. Drink now. (James Suckling)
SP9191 pts. - Wine Spectator - Nov 30, 2018
Bright and balanced, featuring a fine, lively bead, mouthwatering acidity and a lightly toasty profile of poached pear and black currant flavors, with rich hints of lemon curd and pastry cream. Drink now through 2020. (Alison Napjus)
WS9090 pts. - Wine & Spirits - December 1, 2012
Tart red-fruit scents give this a vinous profile, fragrant with cranberry, root vegetables and ginger. It finishes clean, with cool limestone minerality. Cellar this for a year to let the flavors develop further.
WE8989 pts. - Wine Enthusiast - 12/1/2018
Well balanced, this Champagne, even with its enormous production, remains a benchmark and is always enjoyable. In this bottling, ripe white fruit is cut with citrus, with an edge of toastiness that gives complexity. Drink now.
RP8888 pts. - Robert Parker’s The Wine Advocate - 31st Mar 2021
Based on the challenging 2017 vintage, the current release of Moët & Chandon’s NV Brut Imperial was disgorged with seven grams dosage (representing a reduction of around 50% in the last 20 years) and contains an unusually high proportion of reserve wines. Offering up aromas of pear, peach and citrus oil mingled with hints of fresh bread and white flowers, it’s medium to full-bodied, ample and pillowy, with racy acids and an enveloping core of fruit, complemented by a pinpoint mousse and concluding with a nicely defined finish. Impressively seamless, it’s a fine rendition of one of Champagne’s largest bottlings. (William Kelley)

Seamlessly knit and graceful, offering a lovely range of ripe cherry and nectarine fruit, with notes of slivered almond, orange blossom and fleur de sel slowly expanding on the palate via the finely detailed mousse and carried through the long, lacy finish by fine chinalike acidity. Pinot Noir. Disgorged January 2021. Drink now through 2026. 350 cases imported. (Alison Napjus)
VN9393 pts. - Vinous - May 2022
The NV PN TX 17, 100% Pinot Noir from Tauxières, is the next wine in Bollinger’s new series of single-village Champagnes. Bright and punchy, the 2017 is redolent of pear, dried flowers, mint, chalk and sage. Aromatically, the 2017 could easily be mistaken for a Blanc de Blancs such is its purity, but the richness and resonance of Pinot are unmistakable on the palate. This is an especially, vinous, layered Champagne that offers striking interplay between its intense fruit and the mineral, saline and savory-laced frame that holds it all together. The only thing this could use is a bit more body, as it is a touch austere. Disgorged: February, 2022. (Antonio Galloni)
VN9393 pts. - Vinous - Mar 2021
Soft, open-knit and wonderfully inviting PN VZ 16 is a worthy follow up to the sublime 2015 that launched this new Blanc de Noirs in the Bollinger range last year. Sweet red cherry, Mirabelle, spice, mint and dried flowers all grace this wonderfully translucent, expressive Blanc de Noirs. North-facing sites in Verzenay that confer tension and energy make up about half the blend, with wines from Aÿ, Bouzy and Louvois playing supporting roles. Vinification is done in equal parts steel and oak. This release is based on 2016 (50% of the blend), with reserve wines that go back to 2006, including 23% from reserve magnums. Readers who enjoy Blanc de Noirs will adore the PN VZ 16. I find the interplay of vibrancy and the creamier notes that are so typical of the house style to be incredibly appealing. Dosage is 6 grams per liter. (Antonio Galloni)
SP9393 pts. - Wine Spectator - Nov 30, 2022
A finely detailed Champagne, with pointillist bubbles softly bursting on the palate, carrying a delicate, layered range of ripe raspberry and yellow peach, candied ginger and crystalized honey, chopped nuts and fleur de sel. Minerally chalk and saline accents drive the finish. Disgorged February 2022. Drink now through 2025. 350 cases imported. (Alison Napjus)
RP9292 pts. - Robert Parker’s The Wine Advocate - 31st Aug 2022
From the commune of Tauxières and the 2017 vintage, Bollinger’s new NV Brut Blanc de Noirs PN TX17 exhibits aromas of crisp pear, orange zest and wet stones mingled with subtle hints of warm bread and dried fruits. Medium to full-bodied, pillowy and fleshy, with tangy acids and impressive ripeness for the vintage, it concludes with an elegantly mordant finish. This doesn’t strike me as a year built to make old bones, but it should nonetheless enjoy over a decade’s evolution. (William Kelley)
JD9292 pts. - Jeb Dunnuck - 11/7/2022
As with the PN VZ16, the NV Champagne Blanc de Noirs PN TX17 Brut was fermented half in barrels and half in stainless steel. It is also 100% Pinot Noir, mostly from the village of Tauxières, predominantly from 2017, with reserve wines contributing to the blend. Floral on the nose, with yellow orchard fruit and baked bread, it is ripe but more linear in its approach and follow through. It’s a very pretty wine to drink over the next 10 years. Disgorged February 2022. (Audrey Frick)

SP9595 pts. - Wine Spectator - Dec 15, 2014
Rich, with smoky hints of roasted almond and toasted brioche, this crystalline Champagne offers a finely detailed mousse that carries the firm, citrusy acidity and flavors of patisserie apple, spun honey and tangy black cherry, accented by subtle, aromatic hints of ground cumin and clove, bergamot and chamomile. Disgorged August 2013. Drink now through 2027. (Alison Napjus)
SP9595 pts. - Wine Spectator - Oct 31, 2016
This mouthwatering Champagne shows a lovely sense of finesse, with firm acidity deftly married to a rich profile of crème de cassis, toasted brioche and lime blossom, accented by hints of café au lait, singed orange peel and exotic spice. Long and plush on the finish. Disgorged 2014. Drink now through 2024.
WE9494 pts. - Wine Enthusiast - 12/1/2010
With its minimum of six years’ bottle aging, this is a beautifully integrated, mature wine. It has a wonderful toast character, layered over sliced pears and ripe acidity. With its complex poise between lightness and richness, this remains an intensely impressive wine.
ST9494 pts. - Stephen Tanzer’s International Wine Cellar - Nov/Dec 2012
Bright yellow-gold. Expressive, toasty bouquet of poached pear, white peach and orange zest, with toasted nut and anise nuances adding complexity. Dry and focused on the palate, offering ripe orchard fruit, buttered toast and ginger flavors that gain weight with air. Shows a suave blend of richness and tension, finishing with excellent clarity and lingering smoke, nut and gingerbread flavors. I’ll bet that this Champagne will be even better with another five to ten years of bottle age.
RP9393 pts. - Robert Parker’s The Wine Advocate - 1st Dec 2005
Oddly, the most consistent Krug wine I have been tasting lately is their non-vintage Brut Grand Cuvée, a big, boldly styled Champagne with smoky, earthy, pear, apple, and spicy aromas as well as flavors, loads of effervescence, and fine body and depth.
WS9393 pts. - Wine & Spirits - December 1, 2013
Substantial, complex and heady, this current release of Grande Cuvée is in a constant state of change. Its flavors range from dark fruit to bright, sunny citrus, from nutty and pleasantly bitter to creamy and sweet. It carries electricity through the mineral resonance of its flavors. Masterfully blended.
RP9090 pts. - Robert Parker’s The Wine Advocate - 31st Dec 2008
The NV Brut Grand Cuvée offers up attractive suggestions of pears, quince, spice, brioche and minerals. As is often the case here, the Grand Cuvée reveals notable elegance and finesse. The use of reserve wines in the blend gives this wine an unusual level of complexity. Readers should expect a fair amount of bottle variation, something I myself have encountered with some frequency over the years. Some bottles can be fantastic, others less so. Although the Grand Cuvée is a good introduction to the Krug house style, I find it increasingly difficult to get excited about this wine. Anticipated maturity: 2008–2011.

SP9292 pts. - Wine Spectator - Dec 15, 2019
Lithe and vibrant, this graceful Champagne is driven by well-knit, racy acidity, carrying flavors of ripe black cherry, grated ginger, toast point and mineral on the satiny mousse. Drink now through 2022. 222,500 cases made, 29,000 cases imported.
SP9191 pts. - Wine Spectator - Nov 30, 2022
A vivacious Champagne, this shows flavors of black cherry, toast point, white peach puree and salted almond set on a finely detailed mousse. Creamy and mouthwatering on the spiced finish. Pinot Noir, Pinot Meunier and Chardonnay. Drink now. 58,000 cases imported. (Alison Napjus)
WE9191 pts. - Wine Enthusiast - 12/1/2015
WS8686 pts. - Wine & Spirits - December 1, 2006
Simple, ripe and smooth, this is a gentle, soft style of Champagne for parties.
