A very creditable contribution to what has become an unfashionable genre is Piper-Heidsieck’s NV Demi-Sec Cuvée Sublime, a lovely wine that wafts from the glass with aromas of honeyed peaches, fresh pastry, nectarine and caramelized citrus. On the palate, it’s medium to full-bodied, with good depth at the core, racy acids and a fine mousse, concluding with a precise finish that avoids any suggestion of cloying sweetness despite its off-dry style. A dessert wine with sweet vanilla flavors, wrapped around nutty, oily flavors. Fruit is not the object here; it’s more decadent, with unctuous, sweet and lingering vanilla and Bourbon-barrel accents.
Toasted marshmallow and coconut accents impart rich and smoky character to this finely balanced demi-sec, with flavors of pear tart and lemon parfait. Fine and creamy in texture, showing mouthwatering, citrusy acidity throughout. Drink now through 2019.

Creamy, with honeyed flavors of passion fruit, guava and spice that show a hint of candle wax. There’s good intensity to the acidity in this exuberant rosé, and it just balances the tropical overtones, with an off-dry, moderate finish. Drink now.
A good benchmark for a sweeter Champagne. In fact, not extravagantly sweet, because the fruit remains fresh, giving pear and apricot flavors, and a pure line in fresh acidity.
This rosé’s sweet strawberry flavors balance a kick of spice and rich undertones of nuts. The acidity is ample enough to support the waxy texture and sweet fruit. Serve with a tart aux fraise or strawberry shortcake.
Yellow-gold with a faint peach skin tinge. Peach, nectarine and spun sugar on the nose. Lush, creamy flavors of sweet pit fruits and melon are deepened by notes of honey and nougat. A touch of orange peel lifts this sappy, off-dry wine, which finishes on a slightly syrupy note. This is easier to drink and less cloying than many examples of sweet Champagne.

This blend includes 40 percent pinot meunier, the balance equal parts pinot noir and chardonnay. Its remarkable fruitiness might be tied to the firm’s long, slow, cool fermentations, which, they believe, allow meunier to maintain its perfume. This is a graceful, vinous Champagne with dramatic high notes of roses and red fruit, finishing clean with a grounding of pale earthiness. It’s a lovely prediction of what Champagne might become in a warming climate.

Light, bright gold. Fresh red berries, orange zest and white flowers on the perfumed nose. Juicy and precise, offering energetic redcurrant and blood orange flavors that show good concentration and a supple texture. A mineral nuance adds bite to the finish, with the floral note echoing.
The NV Brut Reserve is a beautiful wine graced with layers of exquisite, mineral laced citrus, pears and white peaches. I suppose this could use a little more length through the mid-palate, but it is nevertheless a strikingly beautiful, pure wine at this price point.

Based on the 2017 vintage, this blend includes 30 percent from a perpetual reserve established in 2005. It’s focused on David Pehu’s parcels in Verzenay, Verzy and Sillery, weighted toward pinot noir (70 percent), and it is red fruit thats pours out of the glass. Powerfully structured as a young wine, with a hint of vanilla bean (20 percent of the base wines were vinified in oak), this is more accessible a day after the cork is popped: The mineral acidity turns frisky, the layered intensity of cèpes and chalk mellows toward generosity.
Packs a fragrant skein of violet, star anise and graphite that winds through macerated cherry and strawberry fruit, raw almond and crystallized honey. David Pehu’s NV Brut Face Nord is surprisingly open for a Champagne made from vineyards in Verzenay and Verzy, where the wines tend to be more steely and taut. Spice, dried flowers and red Pinot fruit build in a soft, caressing Champagne that can be enjoyed with minimal cellaring. Time in the glass brings out attractive freshness, lift and energy. This is a terrific introduction to David Pehu’s range. Even with the blocked malolactic fermentation, this is a pretty supple and inviting Champagne. The interplay of fruit richness and vibrancy is compelling. Disgorged: March 2018.
Disgorged in November 2019, the latest release of Pehu-Simonet’s NV Brut Grand Cru Face Nord is showing nicely, offering up aromas of white flowers and walnuts mingled with hints of orange oil and crisp yellow apple. Medium to full-bodied, fleshy and incisive, with racy acids and chalky grip, it will unwind further with a little time on cork.
