Perhaps no other wine region in the world has the name recognition of Champagne, to the point where people often mistakenly use the word "Champagne" to describe any sparkling wine. Yet only wines produced within the region can legally be called "Champagne," and to this day it produces some of the finest sparkling wines known to earth.

Since he created his company in 1981, Bruno Paillard has become an important force in Champagne, owning a number of other brands. But his top wines are made under his own name; they go for finesse and elegance. This bottling also has a touch of mature, toasty acid flavors. The bottles carry the year of disgorgement — an excellent idea.
Rich aromas of pears and toast emanate from the glass of the non-vintage Champagne Brut Premiere Cuvee (disgorged September, 2004), a blend of 45% Pinot Noir, 33% Chardonnay, and 22% Pinot Meunier. Light to medium-bodied and frothy, this peppery apple-flavored sparkler is highly focused, slightly tangy, and long in the finish. Drink it over the next 3–4 years.
(D5B5E1; disgorged May, 2005) Bright yellow. Intense spiced pear and ripe citrus aromas, with subtle mineral notes adding complexity. Round and juicy in the mouth, with a deep pear flavor and a suggestion of blood orange. Gentle acidity provides snap to the finish, which features a note of creamy orange.

The quality of this non-vintage blend is impressive, from it integrated Champagne scent to its creamy texture that carries aromas and flavors of green apples, white flowers, and fine minerality. It all comes together in the finish, where the opulent, pillowy texture meets the crispness of the mousse and light acidity.
Pale in color, with a strong influence of red fruit in the aromas, this is blended trio a rich style. The texture is plush, the fruit sweet yet balanced by a robust architecture so it finishes clean. A generous wine for aperitifs or to serve with roast fish.
There’s a tight, floral raspberry essence at the center of this wine, its fruitiness held by brisk, flinty acidity that keeps the finish mouthwatering. A firm wine for poached salmon.
Cliquot’s Yellow Label is consistently one of the best non-vintage Bruts from the major houses in Champagne. The current release bristles with fresh apple flavor, with the scent of heirloom apples off the tree. That flavor runs straight through the wine, savory and clean, with a firmness for boudin blanc with roast apples.
Founded by Francois Clicquot in 1772, Veuve Clicquot reached its first pinnacle of fame with the widow Nicole-Barbe Clicquot, who scouted out some impressive vineyard sites during the 19th century. Jacques Peters, who is now in charge of the estate, crafts one of Champagne’s best nonvintage Bruts by enriching the Yellow Label with up to 40 percent of older wines from the firm’s reserve stock. Nutty scents of yeast develop into chalkier mineral flavors as the wine opens with air. It has a fresh scent of narcissus to balance the more mature tones of its reserve wines. It’s rich enough for food, but also easy to enjoy on its own.
The NV Brut offers up attractive notes of smoke, tar, rich ripe pears and flowers in a medium to full-bodied style. There is a good measure of persistence, although the wine could use a little more polish on the finish. This is Lot 14009913, disgorged between December, 2007 and January, 2008. Anticipated maturity: 2008–2010.
Bright yellow-gold. Poached pear and candied citrus fruits on the nose, which shows notes of spun sugar and toffee. Sweet orchard and pit fruit flavors are slightly cloying and loose-knit, with slow-mounting spiciness. Finishes on a warm note, with decent length and a suggestion of candied orange.

A whimsical play on fruit and spice, this is delicate enough to hint at an orange blossom scent and meaty enough to serve with cured sausages. It bristles with acidity over red fruit, lasting on heady complexity.
The NV Brut Rosé is a straightforward, accessible wine to enjoy over the next year or two. With a little additional refinement in the tannins, this bottling might merit a slightly higher score. Offering up aromas of pear, peach and citrus oil mingled with hints of fresh bread and white flowers, it’s medium to full-bodied, ample and pillowy, with racy acids and an enveloping core of fruit, complemented by a pinpoint mousse and concluding with a nicely defined finish. This elegant Champagne displays citrus, mineral and toast character in equal measure, with bright notes of preserved lemon and verbena layered with smoke, chalk, brioche and nut flavors. The interplay is backed by deftly knit acidity, riding the fine and creamy mousse through to the lingering finish. Chardonnay, Pinot Noir and Pinot Meunier. Disgorged May 2019. Disgorged with five grams per liter dosage, Moët’s 2013 Extra Brut Grand Vintage is a real success, wafting from the glass with aromas of pear, fresh bread, Meyer lemon, nougat and white flowers. Medium to full-bodied, chiseled and fine-boned, with an enveloping core of bright, vibrant fruit and a pretty pinpoint mousse, it concludes with a precise, penetrating finish. Incisive but not austere, it’s an impressive effort, reflecting good levels of maturity in this cool, late harvest. It’s as fine a rendition of this cuvée as I can remember tasting.
A creamy-textured Champagne with fine bubbles that are numerous and textural. It’s full-bodied and rounded with lovely bread dough and cooked apple, as well as just a hint of stone and mineral. Mouthwatering acidity drives this sleek rosé Champagne, with juicy star fruit and raspberry flavors riding the lively mousse, accented by hints of pastry, orange peel, smoke and dried herb. Drink now.
Dark, vivid pink. Ripe red berries, rose oil and tangerine on the nose, plus a subtle note of toasty lees. Bitter cherry and berry skin flavors give way to softer raspberry in the middle, with a tangy blood orange nuance adding cut and lift. Packs a punch but shows very good clarity and delineation, finishing round, smooth and quite long.
Pale pink. Delicate, racy aromas of flowers and spicy red berries. Focused, even tight, with tart red fruit flavors enlivened by tangy acidity. This is one of the driest versions of this wine I can recall. Finishes brisk and clean, with a lingering impression of white peach.
