Sake is one of the largest growing categories in the past ten years, especially among younger drinkers. Japanese sake is brewed, like beer, from polished rice grains. Types of sake range from dry to sweet as well as light to heavy, and as a general rule, the greater the polish percentage, the higher the quality of the sake.
The polish scale, from least to greatest ranges:
- Honjozo
- Junmai
- Tokubetsu Honjozo
- Tokobetsu Junmai
- Ginjo
- Junmai Ginjo
- Daiginjo
- Junmai Daiginjo
In addition, each bottle will list a number indicating the sweetness level, with lower or negative numbers being the sweetest and higher or positive numbers being drier.
