The second wine of Château Quintus, the 2020 Le Dragon De Quintus is one impressive looking barrel sample, offering lots of cassis and black cherry fruits as well as medium to full body, ripe, soft tannins, plenty of tobacco, earth, and green flower notes, and outstanding length on the finish. It doesn’t have the richness of the Grand Vin but has lots of class and should drink well for 10–12 years or more. (Jeb Dunnuck)

Readers will find a rich, flamboyant wine in the 2016 Barde-Haut. There is not a ton of subtlety here, but I am not sure that matters all that much given how immensely pleasing the 2016 is. Crushed rocks, graphite, lavender, blackberry, plum, and violet infuse a Saint-Émilion that offers tremendous textural richness as well as vibrancy. Most importantly of all, the 2016 is flat-out delicious. This is a decidedly opulent, dark Saint-Émilion with all of the elements impeccably balanced. I loved it.

Lastly, the 2016 Château Barde-Haut might end up being the best wine ever made at this address from the Garcin-Lévêque family, and it certainly ranks with the crème de la crème of the vintage. Dense purple-hued with awesome notes of cassis, black cherries, spring flowers, damp earth, and violets, it hits the palate with incredible purity and precision, a deep, multi-dimensional texture, sweet tannins (from ripe fruit, not sugar), and a building sense of minerality that shows on the finish. It has the depth of fruit and elegance to shine even today yet will benefit from 3–5 years of bottle age and evolve for two decades. (Jeb Dunnuck)

Incorporating 20% Cabernet Franc, the Merlot-dominated 2016 Château Barde Haut is one of the darker colored wines in the lineup. It offers a Grand Cru Burgundy-like purity and elegance as well as beautiful cassis and darker fruits, smoked earth, black cherries, and damp earth aromas and flavors. This medium to full-bodied, balanced, yet tight, backward, pure effort needs a solid 5–7 years of cellaring to round into form, but it’s beautifully balanced and packed with potential. (Jeb Dunnuck)

Medium to full-bodied and richly fruited in the mouth, the palate bursts with blue fruits, framed by firm, rounded tannins and seamless freshness, finishing long.

Another spectacular effort from L’Evangile, the 2010 is a close rival to the 2009 and should be fascinating to compare with that vintage over the next 30 or so years. Stunningly rich and black/purple in color, the 2010 L’Evangile offers up the tell-tale floral note as well as black raspberry jam intermixed with cassis and kirsch. There are also ethereal floral notes and a hint of background oak. The pH is slightly above average (3.7 versus the pH of 4.0 that the 2009 and 2000 possessed). This is a massive, rich, very impressive L’Evangile, and readers should take note of the “+” in my rating, which could certainly push this wine way up there. Remarkably, I was shocked when I learned that this wine was aged in 100% new oak, as the oak is a background element in this blockbuster l’Evangile. Forget it for 3–5 years, and drink it over the following 30–40.

Discreet today, but shows the balance and precision to unfold slowly with cellaring. Best from 2017 through 2030.

The wine is surprisingly approachable already yet should keep for 15–20 years.

The 2010 is a brilliant Chateau Margaux, as one might expect in this vintage. The percentage of Cabernet Sauvignon in the final blend hit 90%, the balance Merlot and Cabernet Franc, and only 38% of the crop made it into the Chateau Margaux. Paul Pontallier, the administrator, told me that this wine has even higher levels of tannin than some other extraordinary vintages such as 2005, 2000, 1996, etc. Deep purple, pure and intense, with floral notes, tremendous opulence and palate presence, this is a wine of considerable nobility. With loads of blueberry, black currant and violet-infused fruit and a heady alcohol level above 13.5% (although that looks modest compared to several other first growths, particularly Chateau Latour and Chateau Haut-Brion), its beautifully sweet texture, ripe tannin, abundant depth and profound finish all make for another near-perfect wine that should age effortlessly for 30–40 years.

It’s a memorable wine and one for aging. Drink from 2027.

The greatest Margaux ever made. More than perfection. Full body, firm and ultra-silky tannins. Black currant, mineral and floral character. It starts slowly and seems almost endless on the palate. Seamless. I want to sing! This is the wine that Margaux never made in some of the classic vintages like 1961, 1959 and 1945. Maybe it’s the 1900 all over again? Breathtaking.

The 2015 Château Margaux is a blend of 87% Cabernet Sauvignon, 8% Merlot, 3% Cabernet Franc and 2% Petit Verdot, all together representing 35% of the total production at the estate. Raised entirely in new oak, it has a lucid garnet color. The bouquet is aimed directly at the senses — there is no dilly-dallying about, as it almost knocks you off your stool with its intense mineralité embroidered into this iridescent, graphite-tinged nose. The focus and penetration here ranks among the finest that I have tasted at this estate since first coming here in 1997. The palate is astonishingly well balanced, perfectly poised with super-fine tannins wrapped around pure blackberry, bilberry, graphite and cedar fruit. Like the Pavillon Rouge this year, there is a Pauillac-like sense of authority and aristocracy, leavened by Margaux-inspired femininity that completes that standout 2015 on the Left Bank. Beg for a bottle and worry about the cost later. Post script: I composed this tasting note five days before the passing of Paul Pontallier. It is a final gift from a gifted winemaker.

The 2015 Margaux is a super-classic wine. In 2015, most Margauxs are notably intense, but Château Margaux expresses the richness of the year in its surprising tannic backbone and overall structure. Far from an up-front or sensual wine, the 2015 Margaux is likely to require considerable cellaring. It is a tightly-wound wine that manages to be both powerful and crystalline in its translucent purity. The 2015 is a wine of real density and yet so very much Margaux. About 35% of the crop went into the Grand Vin.

The 2015 Pavie is a blend of 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon that is matured in 80% new oak and 20% one-year-old barrels. It has a really quite glorious bouquet that is sensual and very well defined and pure. In my opinion, just dialing down the new oak even by 15% is allowing more personality and more terroir-expression to filter through. The palate is medium-bodied with supple, ripe, lace-like tannins and a fine bead of acidity. It feels caressing and sensual in the mouth with superb mineralité and purity on the vivacious and sustained finish. This is unquestionably the best wine from Gérard Perse in 2015: a great Pavie with a very long life ahead, though I would cellar it for at least a decade to witness it in full flight.

One of the wines of the vintage, the 2015 Pavie is dense, powerful and seamless. A huge, spherical wine, even for the year, the 2015 exudes depth. Even with all of its intensity, the 2015 retains striking freshness and nuance, with plenty of bright red stone fruit and floral notes taking center stage. The super-extracted, oak-driven style that was such a Pavie signature a decade ago seems to be giving way to a more refined approach that showcases fruit, richness and purity. This is a superb showing from Gerard Perse and consulting winemaker Michel Rolland.

A lovely sanguine hint leads off, followed by racy, elegant juniper, tobacco, red currant and damson plum notes that move in unison. Broadens and deepens, adding notes of currant preserves, warm ganache and smoldering tobacco, with a swath of loamy structure. Yet even as the bass line increases in volume through the finish, this maintains purity and poise. Should deliver some stunning aromatics at peak, which will take awhile to achieve. The 2015 Cheval Blanc represents the entire vineyard this year, since there is no Le Petit Cheval (two plots that did not meet requirements were not included in any blend). A blend of 45% Cabernet Franc/Cabernet Sauvignon and 55% Merlot, matured in 100% new oak, it has a very complex bouquet, subtle and tightly wound, very precise with dark berry fruit, hints of graphite, minerals and a hint of black pepper, perhaps a little spicier than recent vintages. The palate is medium-bodied with extraordinarily fine tannin. Beautifully balanced, perfectly controlled, this Cheval Blanc gently builds in the mouth, but remains strict and precise. The Cabernet Franc here is very expressive (though apparently the Merlot was showier prior to malolactic). This is an intellectual Cheval Blanc, thoroughly enjoyable, but it will need 10–12 years to really show its pedigree. A profound wine in the making, it will rank with the great wines of the past.

A wine of total finesse, the 2015 Cheval Blanc speaks to understatement above all else. Sweet floral notes meld into a core of bright red stone fruits and mint. Silky, nuanced and wonderfully persistent on the palate, the 2015 possesses remarkable depth, but in an understated fashion. There is plenty of tannin buried beneath the fruit. The 2015 is not an obvious Cheval Blanc, but rather a sublime wine that will only start to blossom with a decade plus in bottle. It will drink well for decades beyond that.

Very deep purple-black in color, it needs a little coaxing to begin, slowly unfurling to reveal a fragrant perfume of violets, chocolate-covered cherries, crushed blueberries and eucalyptus over a core of preserved plums, kirsch, black raspberries and crème de cassis plus hints of licorice and chargrilled meat. Full-bodied and built like a brick house, it has a solid foundation of firm, super ripe, grainy tannins and seamless freshness interknit with the black fruit preserves and minerally layers, finishing very long and very decadent. Superb!

Turning the dial up considerably, the 2016 Château Pavie leaps out of the glass with a thrilling bouquet of crème de cassis, toasty oak, graphite, white truffle, crayons, and flowers. A blend of 60% Merlot, 22% Cabernet Franc, and 18% Cabernet Sauvignon brought up in 85% new French oak (the new oak has been dialed back in recent vintages), this full-bodied Pavie is made in a more elegant, seamless style compared to prior great vintages, yet it still has brilliant depth of fruit and concentration, ripe, present tannins, a seamless texture, and an awesome finish. The 2016 Pavie is a blend of 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon cropped at 38 hectoliters per hectare between 10 and 20 October. The alcohol this year is 14.55%, and it is matured in 80% new oak and 20% one-year-old wood. As Gérard Perse explained, this is a Pavie that has taken stock and shifted in direction in recent years, reflecting more of its exceptional terroir instead of winemaking. It has a very intense bouquet that is extremely well-defined and shrugs off that higher alcohol level. You can find the graphite vein courtesy of the Cabernet Sauvignon and the underlying tension, while a second bottle had a soupçon more florality. The palate is medium-bodied with succulent, ripe, supple tannins that gently caress the mouth. It feels beguiling and charming, totally different in style compared to say Cheval Blanc, offering a more sensual take on the 2016 growing season. It is a very impressive follow-up to the 2015 Pavie and may surpass it once in bottle.

This is the highest proportion of Cabernet Sauvignon apart from 2013, which was due to the poor Merlot. It was cropped around 50 hectoliters per hectare depending on the grape variety, for example it could be up to 65 hectoliters per hectare in some sectors. Lucid in color, it has a detailed and precise bouquet with mineral-rich blackberry, raspberry coulis and limestone scents. It feels very perfumed, though not powerful like many Grand Vins in 2016. The palate is a different creature to the aromatics. Here is the intensity of the vintage with shimmering black fruit laced with spice, a killer line of acidity and an irresistible crescendo on the finish. Then, graphite lingering on the aftertaste, a nod to Pauillac perhaps. The aftertaste is so long you could probably write a letter to your friend enthusing about this wine before the aftertaste fades. Doubtless it is destined to be compared to the magnificent 2015 Château Margaux and to be truthful, there’s a hair’s breadth between them. In a word: crystalline.

The 2016 Clos Fourtet is a blend of 90% Merlot, 8% Cabernet Sauvignon and 2% Cabernet Franc aged in 60% new oak. It has a generous, well defined licorice-tinged fruit that is very focused. The palate is medium-bodied with fine tannin, blackberry and boysenberry fruit with that salted licorice theme continuing. This Clos Fourtet has impressive concentration, yet there is real elegance and persistence, fanning out wonderfully towards the finish. Mathieu Cuvelier has overseen another outstanding Clos Fourtet. Tasted twice, with a second bottle demonstrating a tad more backbone but equally admirable.

Vivid, creamy, ample and explosive in all of its dimensions, the 2016 Clos Fourtet maintains striking aromatic freshness and tension despite its intensity. All the elements fall into place effortlessly. The final blend is 88% Merlot, 10% Cabernet Sauvignon and 2% Cabernet Franc. The 2016 spent about four weeks on the skins. New oak is around 60 percent. This is a superb showing from an estate that has been on a roll. Tasted three times.

The Merlot grape has long been known for its versatility and adaptability. With its origins in the Bordeaux region of France, Merlot spread across the globe, becoming one of the most widely planted grape varieties. Merlot’s reputation took something of a dive around the turn of the millennium, largely due to the preponderance of poor-quality mass-produced Merlot wines. What Does Merlot Taste Like?

Merlot produces wines with diverse flavor profiles. Primary flavors often include cherry, plum, and vanilla. Merlot is typically very dry with a medium-full body, medium-high tannins, and medium acidity.

When produced in warmer climates, Merlot wines tend to be fruitier with more refined tannins. Aging in oak adds notes of chocolate and vanilla. In contrast, cool climate Merlot wines have a more structured profile and can be mistaken for Cabernet Sauvignon. Cool climate Merlot wines include many famed Right Bank Bordeaux appellations, such as Pomerol and Saint-Émilion.

Where Is Merlot Wine Produced?

Merlot’s widespread popularity and suitability for varied climates allow it to be cultivated in numerous countries and regions. France is the largest producer, with nearly two-thirds of the world’s Merlot plantings. But Merlot is also grown in Italy, California, Chile, Australia, Argentina, New Zealand, South Africa, and numerous other locations.

With such a broad range of production locations, Merlot can be found in both “International style” and the traditional “Bordeaux style.” The International style depends on late harvesting to produce a fuller-bodied, high-alcohol wine with velvety tannins and intense plum and blackberry flavors. The Bordeaux style, however, focuses on earlier harvesting, which results in medium-bodied wines with less alcohol and fresh red fruit flavors.

Merlot Varietals and Blends

Merlot is a key blending grape in red wines made from multiple grape varieties, but it is also available in varietal wines that are entirely or almost entirely produced from the Merlot grape.

As one of the primary grapes used in Bordeaux wine, Merlot is often blended with Cabernet Sauvignon, Cabernet Franc, Malbec, and Petit Verdot. In traditional Bordeaux blends, Merlot adds a smoother texture and mouthfeel, with its particular influence depending on the specific region and appellation.

In the famous Pomerol appellation, the prestigious Château Pétrus is composed almost entirely of Merlot. The iron-clay soils of the region provide Merlot with more tannins than are found in other Bordeaux appellations. Merlot is also commonly used in blends in Italy, where its lower acidity balances the higher acidity of other indigenous Italian grape varieties.

Food Pairings for Merlot Wine

Merlot’s diverse range of styles lends itself to a wide array of food pairings. Cabernet-like Merlots pair well with red meats, while softer, fruitier Merlots pair well with the same foods as Pinot Noir, such as salmon, mushrooms, and green vegetables. Light-bodied Merlots go well with shellfish dishes.

How Should Merlot Be Served?

Merlot is best enjoyed at a temperature of around 60–65°F (16–18°C). If the wine is too warm, the alcohol will overpower the delicate flavors, while serving it too cold may mute the flavors and aromas. Decanting Merlot, especially younger or more tannic wines, can help soften the tannins and enhance the overall tasting experience.
