You need to pour this in the glass at least one hour in advance, and then it gradually starts to talk more and more, getting better and better, offering beautiful aromas of crushed violets, wild flowers, minerals, crushed blueberries, dark cherries and hints of spice, lard and moss. Great depth to both the nose and palate. Juicy and composed, with so many tiny grains of ultra-fine tannin that seep through during the subtle yet endless finish. Lingers for minutes. Drink now if you want, but decant it properly. Better after 2025.

It was produced with a blend of 92% Garnacha, 7% Cariñena and 1% Garnacha Blanca, Macabeo and PX. The difference between this and the 2020 Les Aubaguetes is the finesse and subtleness of L’Ermita and the class and quality of the tannins. The single-vineyard 2020 Finca Dofí comes from the 14 hectares of vines planted across three parajes (lieu-dits) in Gratallops, a blend of 83% Garnacha, 12% Cariñena, 4% Picapoll—a grape with low sugar and high acidity (good for climate change) that he regrafted some four years ago—and 1% white grapes: Garnacha Blanca and Macabeo, all fermented in oak vats with 10% full clusters and indigenous yeasts and matured in large oak barrels (bocoyes and foudres) for 15 months. It has good ripeness, 14.5% alcohol and a soft texture with nice balance, good freshness and fine tannins. 18,778 bottles and some other larger and smaller formats produced. The regional 2019 Les Terrasses Velles Vinyes was produced with a blend of grapes from 80 plots in eight villages from Priorat, 82% Garnacha with 17% Cariñena and 1% white grapes, a year unusually high in Garnacha and unusually low in Cariñena that suffered a lot from the heat. The destemmed and lightly crushed grapes fermented in concrete and oak vats with indigenous yeasts, and the wine matured in French oak barrels for 12 months. What happened here is that Cariñena was burned by a heat spike of 43 degrees Celsius on the 28th of June, and there was a wildfire in Montsant that perhaps could have warmed things up even more. I think there might be a change toward more Garnacha and elegance in the wines from Álvaro Palacios in Priorat, as this is brighter and less rustic than this wine used to be, more polished, perfumed and fine. The more backward of the 2021s was the 2021 Finca Dofí, which was very primary and smelled almost like the fermentation vessels, and it took time in the glass to open up. The blend is higher in Garnacha and they couldn’t use the Picapoll, as it didn’t work well that cool year, so it’s 90% Garnacha, 9% Cariñena and 1% white grapes. It achieved 14.5% alcohol but kept better freshness than in 2020, a constant in the 2021 wines. Very promising. They expect 24,000 bottles. It should be bottled around April 2023. (Luis Gutiérrez)

Scented, delineated nose but has depth, too. It effuses wet-stone minerality that gives a thin overlay to the red and blue berries. Some spices, briar and hibiscus, too. Juicy and medium- to full-bodied on the palate, which is a little more vertical and powerful than many of Palacios’ reds, highlighted by real tension and tautness here. Goes on and on. Drink or hold. The single-vineyard red 2019 Finca Dofí comes from the 14 hectares of vines planted across three parajes (lieu-dits) in Gratallops. This year, it’s 87% Garnacha, 12% Cariñena and 1% white grapes (Garnacha Blanca and Macabeo. It fermented in oak vats with indigenous yeasts and matured in large oak barrels (bocoyes and foudres) for 14 months. It’s classy, elegant and fresh with very clean aromas and flavors, not lacking concentration or power. There is superb definition and purity here; it has to be the finest and most elegant Dofí to date. It has finer tannins and more elegance than La Baixada this year. The 2018 was fragrant and this has more clout but superb balance. These two vintages have been great for Dofí. I still remember the 2005, hard as nails then and what the wine is now — spherical and velvety. Dofí on a roll… It was bottled in May 2021, and 21,146 bottles were produced.

Take your time to appreciate this beauty. This is different from the richer and more opulent 2020, instead, it is more mineral, with a rather thick shield of minerality that makes it feel ethereal yet protective. Finely ground white pepper, violets, herbs and a hint of bacon and slate to the blue and red berries. Medium to full body on the palate with melted tannins and a long, bracing finish. The 2021 L’Ermita is a legend in the making, with 13.9% alcohol, the lowest ever, mind-boggling finesse and detail, purity, symmetry, elegance and great freshness that makes it vibrant with a low pH of 3.31 and 6.18 grams of acidity. These parameters should make it long-lived, and the wine is going to be vibrant and develop citrus nose of grapefruit and orange peel. It’s a powerful wine with plenty of energy, abundant tannins, even more fine and elegant than those from the 2020 I tasted next to it, and with great balance. It has a high percentage of Cariñena, much higher than the 2020, and comes down to 75% Garnacha, 24% Cariñena and 1% whites. They expect to produce some 2,800 bottles of this 2021 in April 2023.
