Almost luminescent green/yellow in color, this anise-based spirit is exactly what you might expect. Fairly one-dimensional on the nose and the palate, it’s licorice, licorice, licorice all the way. But although Pernod is sweetish on the tongue, it finishes with a nice, crisp dryness.

Despite its overuse among college students as a get-drunk-quick shooter to cascade down ice luges, this is excellent digestif material for grown-ups too. This ruddy, herbal spirit is dominated by licorice and clove flavors, with a faint, bracingly bitter tinge in the medium-bodied mouth and on the finish. The college crowd got one thing right, though: Jäger is best icy cold.

This nut-brown liqueur, known best as a college shooter, has a sophisticated side, too. Look for a root-like nose that hints at sarsaparilla and a spiced, warming palate that suggests cinnamon, gingerbread, molasses and clove.

Starting as green-tinged gold, this louches to opal touched with pale green. The mild fragrance shows fennel and a hint of juniper. Although the alcohol level is comparable to other absinthes, it seems to require more dilution to tone down the alcohol heat and tease out a faint sweetness. Even so, it retains a relatively spicy profile, showing fennel, black pepper and hot cinnamon, plus a lingering licorice note at the back of the palate.
