Have patience with this small-batch Shiraz—it changes constantly in the glass. While it’s not quite as charming as this natural-leaning producer’s two Semillons, it does offer personality in the form of ground cornmeal, plum, currant and licorice notes, which become more floral and spicy as the wine sits in the glass. On the mouth, the acidity soars and the tight-grained powdery tannins rule. But there’s bountiful fresh fruit and spice flavors as well. (Christina Pickard)
