The Delamotte NV Brut blends approximately 55% Chardonnay with 35% Pinot Noir and 10% Pinot Meunier. It is clear, round and spicy on the predominantly fruity and vinous nose with its delicate chalk and hazelnut flavors. On the palate this is a lithe, finessed, fresh and elegant Brut with good structure and a pure, salty-mineral and cleansing finish. The mousse is highly delicate, the whole performance almost filigreed yet well structured. This is a delicious Brut. My sample is based on the 2013 vintage that was disgorged in July 2016 with a dosage of eight grams per liter. Tasted November 2017.

The NV Brut Special Cuvée opens with elegant, well-delineated aromas of honey, brioche, roasted nuts, orange zest, flowers and peaches, of which appear on the palate in a classy, finessed expression of the house style. This is an especially refined and delicious NV Champagne. The Special Cuvée is roughly 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier (2004, 2003) sourced from a variety of vineyards. Bollinger adds 5–10% of reserve wines (in this case from 1995 and 1996, aged in magnums) which gives this offering its lovely complexity. The dosage is 7–9 grams per liter. This is Lot: 807704, disgorged towards the end of 2007. Anticipated maturity: 2008–2012.

Jacques Peters, who is now in charge of the estate, crafts one of Champagne’s best nonvintage Bruts by enriching the Yellow Label with up to 40 percent of older wines from the firm’s reserve stock. Nutty scents of yeast develop into chalkier mineral flavors as the wine opens with air. It has a fresh scent of narcissus to balance the more mature tones of its reserve wines. It’s rich enough for food, but also easy to enjoy on its own.

Bright yellow-gold. Poached pear and candied citrus fruits on the nose, which shows notes of spun sugar and toffee. Sweet orchard and pit fruit flavors are slightly cloying and loose-knit, with slow-mounting spiciness. Finishes on a warm note, with decent length and a suggestion of candied orange.

The first launch for this wine, the NV Champagne Essentiel Blanc De Noirs Extra Brut is 80% Pinot Noir with the rest Meunier and comes from sustainable grapes. It doesn’t include any reserve wine, so it’s entirely from the 2019 vintage, and moving forward, Boutillat will begin to introduce a new solera to go into this cuvée, coming from 10 different villages across the region. A bright straw hue, the wine opens to a delicate smoky lift with fresh notes of orange citrus, blackberry, and flowers. The palate is pure and fantastic, with distilled black fruit, a fresh, chalky texture, and an elegant, fluffy mouse as well as a well-rounded purity of fruit through the mid-palate. A great first vintage for this wine, it has a lot of charm now and will age gracefully over the coming 10–12 years. It’s a wonderful gateway into Blanc de Noir, a category that should be more prized. On the palate, it’s medium to full-bodied, broad and comparatively textural, with good depth at the core and a chalky, gently phenolic and distinctly sapid finish.

Packs a punch but shows very good clarity and delineation, finishing round, smooth and quite long.
