Dosed with five grams per liter in November 2017, Dosnon’s NV Recolte Noire (Black Label) is a pure, oak-fermented Pinot Noir from the Côte des Bar. White-golden in color, this is a fine, fresh and delicately fruity Champagne with just a hint of oak. Intense, fresh and lush on the palate, this is a straight, perfectly round and well-structured Blanc de Noirs with good grip and vitality on the finish. Excellent! Tasted July 2018.

A new cuvée from Palmer & Co is the NV Brut Rosé Solera, a lovely effort that includes some 8% Pinot Noir from a perpetual reserve. Pale in hue, it wafts from the glass with attractive and already complex aromas of fresh bread, red berries, spices, dried citrus peel and orange. On the palate, it’s medium to full-bodied, with a nicely concentrated core of fruit, racy acids and a fine mousse, concluding with a saline finish. (William Kelley)

Extra Brut Champagne

The first launch for this wine, the NV Champagne Essentiel Blanc De Noirs Extra Brut is 80% Pinot Noir with the rest Meunier and comes from sustainable grapes. It doesn’t include any reserve wine, so it’s entirely from the 2019 vintage, and moving forward, Boutillat will begin to introduce a new solera to go into this cuvée, coming from 10 different villages across the region. A bright straw hue, the wine opens to a delicate smoky lift with fresh notes of orange citrus, blackberry, and flowers. The palate is pure and fantastic, with distilled black fruit, a fresh, chalky texture, and an elegant, fluffy mouse as well as a well-rounded purity of fruit through the mid-palate. A great first vintage for this wine, it has a lot of charm now and will age gracefully over the coming 10–12 years. It’s a wonderful gateway into Blanc de Noir, a category that should be more prized. This wine relies on a perpetual reserve started by Thibaud Brocard’s father, Pierre, in 1991, providing 30 percent of the blend. The balance, in this case from the 2019 harvest, is 75 percent pinot noir, 20 percent pinot blanc and five percent chardonnay from the family’s estate. Spontaneously fermented in stainless steel, a portion (15 percent) of this blend is vinified in French oak barrels. This wine’s pinot noir berry-skin richness and heady depths of flavor greet you with a muscular embrace. Above that, there’s a note of tangerine zest lasting through a clean finish. The integration of the texture and the fruit makes the wine completely satisfying.

Based on the challenging 2017 vintage, the current release of Moët & Chandon’s NV Brut Imperial was disgorged with seven grams dosage (representing a reduction of around 50% in the last 20 years) and contains an unusually high proportion of reserve wines. Offering up aromas of pear, peach and citrus oil mingled with hints of fresh bread and white flowers, it’s medium to full-bodied, ample and pillowy, with racy acids and an enveloping core of fruit, complemented by a pinpoint mousse and concluding with a nicely defined finish. Impressively seamless, it’s a fine rendition of one of Champagne’s largest bottlings. (William Kelley)

The NV Brut Special Cuvée opens with elegant, well-delineated aromas of honey, brioche, roasted nuts, orange zest, flowers and peaches, of which appear on the palate in a classy, finessed expression of the house style. This is an especially refined and delicious NV Champagne. The Special Cuvée is roughly 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier (2004, 2003) sourced from a variety of vineyards. Bollinger adds 5–10% of reserve wines (in this case from 1995 and 1996, aged in magnums) which gives this offering its lovely complexity. The dosage is 7–9 grams per liter. This is Lot: 807704, disgorged towards the end of 2007. Anticipated maturity: 2008–2012.
At every turn of flavor, barrel-fermented base wines add opulence to this Champagne with scents of apple wood, ginger and mustard seed balancing the youthful fruit. The flavors buzz with acidity and richness, a contrast of green apple with broader notes of baked apple; the texture is creamy, the finish completely clean. The wine’s structure is substantial enough to serve with sliced, seared beef filet at a holiday party.
Light gold color with a strong mousse. Classic Bollinger aromas of poached pear, caramel apple and toasted bread, lifted by a bright hint of lime. Full and rich on the palate, held up by good acids. The notes of apple, pear and toast repeat in the mouth. Finishes with flavors of singed apples and pears.

Very impressive for a “regular” non-vintage Brut, not only in terms of aromatic complexity—candied citrus, dried peach and fresh mirabelle plus a hint of bread dough—also in terms of texture, the creamy, rich and crisp sides of the wine neatly interlocking. Long, structured finish. A cuvee that’s half 2018 and half reserve wines, some of which are a couple of years old, but many of them are five- to 10-years-old, with several over 10-years-old.
