The 2017 Aquinas Cabernet Sauvignon offers up aromas of wild fruit, briar patch, plum and blackcurrant. The palate opens to a juicy, lush, medium-bodied mouthfeel where the aromas ring true with bright fruit character and crushed herb, pencil shavings and spice flavors. The wine is a cooler climate style; elegant with a rich texture and integrated, smooth tannins. With 12 months of aging in 80% American oak and 20% French oak, the Cabernet Sauvignon is well-balanced with good acidity and a lingering, flavorful finish. This satisfying wine is pleasant to sip on its own or pairs well with a variety of foods including grilled rib eye steak or roasted leg of lamb.
