An elegant Cava, this feels rich and composed. Its simple pearlike fruit integrates with the bubbles and the dosage, providing a clean, complete and satisfying length of flavor. Easy to enjoy on its own, yet substantial enough for veal sautéed with sage and mushrooms.

Segura Viudas keeps turning out exceptional sparkling wines, at very reasonable prices. Forget the bare-bones Cavas, the austere fruit, the slight rubbery quality you try to ignore because you only paid $5 for the bottle. Think instead of creamy, effervescent fruit, full, mouth-filling flavors and rich, distinctive yeastiness. Think of layered flavors, a little complexity and sophistication. So you’re spending $10 instead of $5. The wine is more than twice as good.

A cava for a voyage to the spice islands: Anise, cinnamon and spiced apple are lifted to the lip of the glass by the soft, rising bubbles in this blend of macabeo (50%), xarel-lo (15) and parellada (35). The texture is lively, full of sweet apple fruit underlain by a lemon-lime briskness, and the flavors are wrapped in a gentle hint of sweetness. This calls out for the richness of pata negra ham or honey-rubbed spare ribs.

A classic cava from top to bottom. The nose offers familiar baked apple, mineral and saline aromas, while the palate is exceedingly fresh in its delivery of pineapple, apple and nectarine flavors. A fruity yet crisp number that foams up nicely on the palate but doesn’t lose it’s focus or form.

Mineral, lime and crisp apple aromas give it a precise, pure nose. And that same character exists on the palate and finish, where white peach, green banana and melon flavors are full and forward. Shows good concentration and quality for a large-production bubbly at this price.

Standard as good brut Cavas go, with yeast, citrus and a hint of matchstick on the nose. The palate shows a good fabric comprised of lemon-lime and apple flavors. Good up front but a little weak on the back end and finish. Still, as a whole this is perfectly good, affordable bubbly that does what it’s supposed to do.
