The nose presents honeyed aromas with a faint peppery backdrop. The body is medium, and the palate starts out replicating the nose, but then grows hotter, and more peppery. The finish is medium in length and pleasingly warm.

Transparent as rainwater but shows some light, inconsequential sediment under the examination lamp — no worries about it, the first couple of passes offer assertive aromas of molasses and cocoa bean — an additional seven minutes of aeration time brings out the bittersweet vanilla bean in full measure; the palate entry is sweet, viscous and intensely bean-like — by the midpalate point the flavor profile includes molasses, raw sugar, and ever-present vanilla bean/vanilla extract; the finish is long, sugary sweet and bean-like; a very concentrated silver that shouldn’t only be used in mixed drinks — good enough to be served straight up; earlier SJ Rating from 1996 was one star when it was called Carta Plata, much improved since then.
