Here is a full-flavored, aggressively effervescent sparkler that fills the mouth. A slight copper tint in the wine’s appearance is evidence that it was made from a high percentage of black grapes, specifically pinot noir. Its aroma is reminiscent of freshly baked biscuits — the yeast-produced flavors are then balanced by freshness in the mouth. Quite tart at the full finish, with a touch of cherry flavor from the pinot noir. Carneros figures prominently in Mumm’s cuvées. Winemaker Greg Fowler aims for freshness with this wine, and he gets it.

Assembled from dozens of individual lots, this sumptuous brut is an example of the art of blending. Based on Pinot Noir and Chardonnay, it’s really as delicious and refined a sparkling wine as you could want for drinking now. Shows lush citrus, strawberry, honey, melon, fig and spice flavors that are wrapped into a smooth, silky bubbling mouthfeel.

The winery’s signature sparkler, this blend of equal parts Chardonnay and Pinot Noir, with touches of Pinot Gris and Pinot Meunier, dazzles in rounded oak and a soft texture marked by grapefruit zest and fresh nectarine. Crisp and vibrant, it becomes richer on the finish, showing a spark of honey-baked brioche.

Clean, citrusy fruit and suggestions of green apples are teamed with subtle, creamy yeast notes in both the aromas and flavors of this engaging young sparkler, and the accent is on freshness throughout. The Brut prestige is a blend of 60 percent Pinot Noir, 34 percent Chardonnay, 4 percent Pinot Meunier and 2 percent Pinot Gris. It’s an elegant wine, beautifully balanced with layers of flavor from the opening sip right through to the finish. A classic brut, it’s a blend of about 50 separate vineyards, representing the different soils and microclimates that attracted Guy Devaux to Napa in the first place.
