Walnut, date, cinnamon and dried blood orange notes are backed by a long finish that lets a singed balsa wood hint hang on. This has an echo of sweetness but remains rather dry in feel. Drink now.

#82: A dry version of a traditional Amontillado Sherry, this fortifies wine is produced using the solera system customary in south-western Spain's Jerez region and designed to produce a consistent style from year to year. Owned by Luis Caballero Florido, the Lustau estate encompasses 540 acres of vines, the source of the grapes for this 100 percent Palomino wine. The wine is aged in 500-liter American oak barrels in a facility in the heart of Jerez de la Frontera.

Reticent aromas of almonds and limestone give way to this wine’s generous flavors of green apple and a subtle touch of orange zest. It’s all shaped by spritzy, mouthwatering acidity.

The dry, medium amber-hued non-vintage Dry Amontillado Los Arcos offers good body as well as a heady personality.

This very affordable Sherry offers a terrific combination of freshness in its walnut and iodine notes and the caramel-molasses component derived from oxidation, making this vibrant Amontillado a winner. Delicious nut and molasses aftertaste. Drink now.

A more flattering style, with an off-dry edge to the walnut paste, hazelnut, date and clove-studded orange notes, which show nice focus and zip on the finish. Drink now.

Walnut, halva, singed almond and green tea notes give this an intriguing profile, flirting with an off-dry character. Stays dry through the bitter orange-edged finish. Drink now. 4,500 cases made.

Round style, yet not without good bite underneath. Boasts caramel, bitter cocoa and iodine notes, picking up roasted nut on the lingering finish. Drink now.

Elegant and classically proportioned, this sherry gives you plenty of briny freshness but adds a rich, smoky, nutty complexity. It’s clean and long on the finish, vibrant and harmonious. Beautifully crafted.

A classic dark Amontillado for soup or marrow on toast, this wine tastes of roasted bones, of tangerine and almond oil, of fresher fruit, like the flesh of pear. The dark, unctuous character parallels Madeira, but it’s both fresher and more pleasingly bitter in a Sherry sense.

There are no excesses to diminish this wine’s drinkability, just softness, warmth and sweetness. Touches of salt and toasted walnut flavors keep this Amontillado’s alcohol at bay.

Light and approachable, with the soft texture of a dry white wine, this offers freshness, salinity and soft, nutty touches. For pickled sardines.

This wonderful sherry is a perfect end-of-the-day cocktail substitute. Crisp and loaded with flavor, it exudes a refined aroma that combines crushed walnuts, dried raisins, and apricots with a touch of smokiness.

Last reviewed in 1994 and rated three Stars. Bronze/burnished orange color; unblemished purity. Initial inhalations encounter deep aromas of leather bound books, butterscotch, and prunes; more time in the glass deepens the leathery aspect and adds a pleasing note of walnut. Entry is lean, clean, tart, and astringent; midpalate features the acidic dried fruit element that dominates the taste profile. Ends cleansing, very tart, and austere. Three Star rating stands. Recommended.

Rich, deep and complex nutty aromas. Fine balance between oxidative qualities and a fresh, nutty character.
