Truth or consequences, N.M., is an unlikely place to make sparkling wine, but this blanc de noirs proves the Gruet family knew what they were doing when they planted their vineyards 4,300 feet above sea level. Among the highest in the country, they benefit from sunny days and chilly evenings. A blend of 75 percent Pinot Noir with the rest Chardonnay, the wine is aged a minimum of two years.

Very pale color; extreme amount of finer bubbles and nice long mousse thanks to methode champenoise; the earthy flavor of green apple skins gives way to the tartness of a honey crisp apple.

Another success from this noteworthy New Mexico producer. This non-vintage blanc de noirs has a fairly yeasty nose with a soft, creamy mouthfeel. Not as high in acid as many, its charms lie in the pretty raspberry flavors.
