Pear, butterscotch, apple, and grapefruit seem all to play a role in the aromatic pleasure, while the wine’s off-dry style seems richer than most bruts.

This lightly sweet style of Cava brings out fresh flavors of Meyer lemon, apple and pear. It’s all about soft fruit, yet it remains completely clean, finishing with scents of apple butter and maple sap. Break out a bottle for dessert with angel food cake.

For a well-made sparkling wine with balance, flavor and a bit of sweetness, look no further. This one features pretty apple, lemon and yeast aromas prior to honey, melon and apple flavors. Finishes smooth and stylish, proving that a cava can be slightly sweet yet rock solid.

One of my personal favorites among the giant collection of Freixenet cavas in the extra dry, which isn’t dry in the least. Just the opposite, it’s loaded with sweet apple and apricot aromas along with peach, melon and candied citrus flavors. Best of all, it maintains its poise while never falling toward cloying or sappy.

Some things never change. Put this sturdy, mildly nutty and fairly bright cava on that list. Year after year, the palate remains comfortably sweet and bubbly, but not too much so. And the round apple, pear and lime flavors even bring a shade of spice along for the ride.

Citrusy on the nose, with just a hint of sulfuric burn and smoke. Flavors of sweet white grapefruit, tangerine and tarragon leaf give the palate that little bit extra, while the finish is smooth but short. Good but a touch flat on the back end and finish.

Smooth, with aromas of vanilla and green apples. The palate is simple yet stately, especially given the price of this Spanish bubbly. The palate offers lemon, tarragon and some butter, while the finish is loaded with citrus peel and licorice.

Leesy and broad up front before a tight scent of apples emerges in the middle, this is vinous, sprightly and gentle. For a white-on-white birthday cake.

Clean and approachable, with lemon-lime aromas leading to an easy, mildly crisp palate with lemon, lime and honeydew flavors. Sweet in accordance with standard extra dry guidelines, and also good for apéritifs and sparkling cocktails.

Fresh on the nose for an extra dry, with lime and apple aromas. Only the slightest bit cloying, with balancing acidity helping out sweet green melon flavors. Finishes nice and normal.

Simple pear-like flavors give this Cava the sweet ripeness of fruit. Its soft scents of cardamom and Indian spice make this an easy aperitif with patatas bravas.

A pleasant, softly fruity bubbly with a tad more sweetness than you’d think from “Extra Dry.” It has some pretty flavors of apple juice with a dash of lime. Crisp acidity and fine, distinct bubbles keep things lively and fresh with this very clean crowd-pleaser of a wine.

Flavors of ginger, honey and orange peel are backed by a good vein of acidity in this refreshing, well-balanced bubbly. Drink now.

Meyer lemon, floral, ginger, nut sand pound cake notes mix in this creamy cava, balanced by lightly juicy acidity, with a fresh, citrusy finish. Drink now.

Off dry, with green herbs and candy corn on the nose. Stays the course on the palate, with sweetness and just enough offsetting zest. Best for fans of sweet wines.

Lively and relatively dry, with honey and apple flavors, on a moderately firm structure. Drink now.

From the initial whiff of sweet hay and apple to its apple-lime flavors, all bounded by a measured hint of sweetness, this is a happy-go-lucky Cava to enjoy with strawberries and cream, or at any festive event.
