This lightly sweet style of Cava brings out fresh flavors of Meyer lemon, apple and pear. It’s all about soft fruit, yet it remains completely clean, finishing with scents of apple butter and maple sap. Break out a bottle for dessert with angel food cake.

One of my personal favorites among the giant collection of Freixenet cavas in the extra dry, which isn’t dry in the least. Just the opposite, it’s loaded with sweet apple and apricot aromas along with peach, melon and candied citrus flavors. Best of all, it maintains its poise while never falling toward cloying or sappy.

Some things never change. Put this sturdy, mildly nutty and fairly bright cava on that list. Year after year, the palate remains comfortably sweet and bubbly, but not too much so. And the round apple, pear and lime flavors even bring a shade of spice along for the ride.

Citrusy on the nose, with just a hint of sulfuric burn and smoke. Flavors of sweet white grapefruit, tangerine and tarragon leaf give the palate that little bit extra, while the finish is smooth but short. Good but a touch flat on the back end and finish.

Leesy and broad up front before a tight scent of apples emerges in the middle, this is vinous, sprightly and gentle. For a white-on-white birthday cake.


Clean and approachable, with lemon-lime aromas leading to an easy, mildly crisp palate with lemon, lime and honeydew flavors. Sweet in accordance with standard extra dry guidelines, and also good for apéritifs and sparkling cocktails.

Fresh on the nose for an extra dry, with lime and apple aromas. Only the slightest bit cloying, with balancing acidity helping out sweet green melon flavors. Finishes nice and normal.
