Clear appearance — devoid of any color whatsoever; the distinctive, phenolic, nonfruity aroma is of minerals, slate, wet pavement, and rain; pleasantly dry to off-dry, exceedingly subtle taste of underripe cherries — I hardly noticed the spirit at all, so nuanced is the alcohol; the aftertaste is as reined-in as the flavor, offering just the stingiest hint of cherry fruit; while I wasn’t expecting a brimming brandy, neither was I anticipating so delicate, so serene a brandy — the longer it sat on my palate after tasting, the more I appreciated its low-key but sturdy presence…

Kirsch, made of Oregon and Washington cherries, seems muted at first but comes alive in a subtle, minty aromas that evolves into the essence of sugared cherries.
This kirschwasser has aromas of cherry, meringue and salty caramel. It has a delicate cherry-blossom taste and is exceptionally smooth.

A great Kirschwasser. Fresh whole Oregon sweet cherries are crushed and fermented and then distilled. This one seems to benefit from several years in large glass jugs. Lots of uses in the kitchen.
