Pretty aromas of raspberry sorbet, vanilla, dough and roasted hazelnuts. The raspberry flavors are delicate and the wine has a lightness and elegance that are first class. Mostly Pinot Noir and Pinot Meunier with traces of Chardonnay and Pinot Blanc.

A classic blend of Pinot Noir, with Pinot Meunier and Chardonnay, this is really a terrific sparkler. It’s soft and round and elegant, a true bubbly rosé that offers rich strawberry, peaches and cream and vanilla flavors that are subtle and complex.

Domaine Chandon, part of Moët & Chandon, has been around since 1973; it was Napa Valley’s (and the U.S.’s) first French-owned sparkling wine house. For several years now, Chandon has been sourcing its grapes for the blanc de noirs — mainly Pinot Noir, with a bit of Pinot Meunier — from the cool Carneros region. Salmon-pink in color, this sparkler is medium-bodied, with subtle strawberry aromas and flavors.

Close to the Chandon norm, but not so deep in fruit or creamy richness as the best of the winery’s efforts, this big bottle shows its yeastiness in toasty, quietly burnt paper notes and carries more evident fruit than the accompanying wine in 750 ml size. More than adequately bubbled and firm in structure, the wine is a bit stiffer and toastier than is typical of the genre, but it has the depth and energy to be a much enjoyed potion at holiday celebrations.

Still our favorite among Chandon’s magnum bottlings, this year’s Blanc de Noirs comes with a quiet streak of cherryish fruit set in support of broad, insistently creamy yeastiness. Nicely composed in the nose and wonderfully rounded in texture is often the case with wines fermented in magnum, it shows the kind of autolyzed complexity that extra time can bring.

The clean and correct aromas offer autolyzed yeast tones along with citrus and cherry fruit nuances. Well-composed but never especially rich or complex, the wined carries a pinpoint mousse that leads to a broad, sweet, fruity wine in mid-palate and an aged-on-the-yeast lingering aftertaste.
