This sparkler is made using the traditional method, as is done in Champagne, but it comes from the Loire Valley of France and is made from Chenin Blanc, Chardonnay and Cabernet Franc grapes. The pale yellow color and tiny bubbles impress on sight. Aromas of freshly cut roses and tiny wild raspberries greet the nose. The very delicate flavors of wild raspberries and barely ripened pears give way to a touch of mint, dandelion leaves and arugula. All of these aromas and flavors are woven together by a cloudlike creaminess. Serve with finger foods at a cocktail party, or to open a grand spread.
