Too many wines from Chablis have succumbed to the ravages of global warming; they’re ripe and succulent, echoing Chardonnays from the Mâcon rather than Chablis. However, Lamblin has managed to avoid this, producing a crisp, steely white that is lean, with razor-sharp acidity. The flinty undertones reflect the limestone soil, and help to make this wine match so beautifully with the traditional shellfish dishes of the region.
