F. Paul Pacult’s Spirit Journal: September 1, 2004
The harvest gold/topaz color is pure and lovely; the first few whiffs encounter sweet, maple-like aromas — later inhalations detect dark caramel, honey and vanilla extract; the palate entry is sweet, corny and honey-like — at midpalate, the sweetness accelerates into a cotton candy, nougat, candy bar effect that’s surprisingly palatable and easy; finishes caramel sweet but simple; hardly a benchmark Canadian whisky but one that is perfect for whisky cocktails of all sorts; its biggest drawback is its high level of sweetness.
Mellow aromas and flavors of dried hay, dried pineapple and bay leaf; smooth with an enjoyable fine texture. Well balanced and harmonious with hits of cedar on the finish.
