With its clean, neutral profile, this graceful gin works well with just about anything, from Aviation cocktails (natch) to bone-dry Martinis. On the palate, look for bewitching hints of caraway, juniper, grapefruit and a dry, faintly spicy finish.

The bouquet emits earthy/mineral-like and fruity scents of slate/stone, wax and orange zest. The palate entry is very citrusy and tart; at midpalate the flavor profile turns astringent and bitter with major grain and citrus fruit influence. Concludes zesty, acidic, fresh and clean. A floral/citrusy style that’s completely different from London Dry’s.

Very minor sediment spotted; otherwise clear and pure. The initial aromatic burst is minty and mouthwash-like, with heavy emphasis on spring garden, flowers, jasmine, and pine; the bouquet noticeably diminishes after aeration, emitting earthy/mineral-like and fruity scents of slate/stone, wax, and orange zest. The palate entry is very citrusy and tart; the midpalate stage displays minor botanical impact but major grain and citrus fruit influence as the flavor profile turns astringent and bitter. Concludes zesty, acidic, fresh, and clean. A floral/citrusy style that’s 180 degrees apart from London Dry.

Full-bodied and precisely balanced, newcomer Aviation gin makes an ideal entry to the category. No learning curve is required to thoroughly enjoy this decidedly spicy, herbal and tangy spirit. Made from 100 percent rye, the Oregon native was obviously devised with a chilled cocktail glass in mind.
